COOKS AROUND TOWN - Ulster Potato Farls
I bet you've not tried homemade farls before!
INGREDIENTS
900g potatoes, peeled and quartered (We like Marfona potatoes from Arrow Farm)
50g plain flour
A knob of butter (melted)
1 tsp salt
METHOD
In a pot, cover potatoes with water and bring to a boil over high heat.
Simmer on a medium for about 20 minutes or so.
Test them with a fork to see if they are ready.
Then drain them and leave to rest in a colander covered with a tea towel until dry.
Mash the potato until smooth.
In a bowl, combine the mash, flour, salt and melted butter and mix into a dough using a fork.
The dough will be pretty sticky, but turn it out on to a well-floured surface and knead it lightly.
Using a floured rolling pin, roll the dough into circles of about eight or nine inches and cut the circles into quarters.
Sprinkle a little flour into the base of a heavy-bottomed frying pan cook on a medium to high heat for three minutes on each side until nicely browned.
