COOKS AROUND TOWN - Spicy tomato soup
Super tomato soup - with a twist.
8 peeled fresh tomatoes
1 medium onion, chopped
1 clove garlic, roughly, chopped
2 sticks celery, chopped
Knob of butter
1 tbs tomato puree
1 tsp chilli powder
1 tbs paprika
1 tbs fennel seeds
2 pints chicken or vegetable stock
Salt and pepper
Small handful of basil leaves
3 tbs olive oil
Method
Heat the oil in a wok or saucepan and fry the onions, celery and garlic over a medium heat until starting to colour.
Add the tomato puree, fennel seeds, chilli powder, paprika, butter and salt and pepper – cook for five minutes gently.
Add the stock and stir well, continue to cook for 20 minutes.
Allow to cool slightly before blasting in a blender or food processor until very smooth.
Check seasoning and serve drizzled with extra virgin olive oil and roughly torn basil leaves.
