COOKS AROUND TOWN - Irish Stew
What could be more homely and comforting than Irish Stew?
Ingredients
1kg lamb neck fillets
500g medium onions
600g potatoes, chopped
400g carrots, chopped
2tbs olive oil
2tbs plain flour
Sea salt and pepper
2 pints chicken stock
2tbs parsley, chopped
Method
Preheat the oven to 190C. Chop the lamb, slice the onions and slice the potatoes and carrots.
Coat the lamb in flour, pepper and salt and fry in the heated oil until browned. Put the lamb into a large caserole dish.
Neatly layer the onions, carrots, parsley, potatoes and lamb.
Pour the stock over it to cover and bring to the boil.
Cover and bake in the oven for 90 minutes until the lamb is meltingly tender.
